11th Century fortified village of Castello di Tocchi, located 25 minutes outside the city
of Siena. A variety of course are offered.
Apicus - Cooking School In Florence
Located in the historic center of Florence the Apicius Cooking School is affiliated with
Lorenzo de'Medici / The Art Institute of Florence. Programs are shaped either for people
who approach "the art of Italian cooking" for the first time, or are experts in the field
who wish to refresh and deepen their cultural and practical experience of Italian cooking.
They consider cooking to be an art, a complete experience involving the whole body in its
appreciation. Courses at the Apicius Cooking School may be taken for one day, a week, a month
or for a semester; you may also enroll in a year-long diploma program. Those
interested in designing personalized group courses are invited to do so. Semester students
will participate in internships at one of many fine Florentine restaurants.

Coltibuono
For the last two centuries Badia a Coltibuono, originally a medieval Benedictine abbey,
has been the gracious villa and prestigious wine estate of the Stucchi-Prinetti family.
And, for the last fifteen years it was the setting for Lorenza de� Medici�s weeklong Villa
Table cooking classes. In 2002 two new programs are being introduced: Tastes of Tuscany:
A Gastronomic Sojourn in Chianti and Cooking Classes at Badia a Coltibuono. The principals
of the programs are guide John Meis and chef Paolo Pancotti. Meis, a longtime resident of
Tuscany, is the author of A Taste of Tuscany and collaborator with Lorenza de� Medici in
the Villa Table cooking program and numerous cookbooks. An experienced leader of food,
wine and art tours, he is a knowledgeable and entertaining guide. Pancotti, chef at the
esteemed wine estate, continues the renowned Coltibuono culinary tradition established
by Lorenza de�Medici, adding his personal approach and professional experience from
some of Italy�s best restaurants. During their sojourn guests stay in comfortable rooms
located along the characteristic fourteenth century corridor of the ancient abbey.
Each room enjoys a delightful view and a private bathroom. There is also time to relax
in the magnificent frescoed drawing room, read in the extensive library, stroll in the
gardens, enjoy the swimming pool, and walk in the vast woods that surround Coltibuono.
Cucina con Vista
Cucina con Vista is born from the experiences that Elena Mattei has gained since 1987
from managing her restaurant La Baraonda in Florence. A few years after beginning the
business, she found that clients were not only interested in tasting the dishes that
were served at her restaurant every evening, but also in experimenting with the art of
Tuscan cookery at home. The Cooking classes take place in a traditional farmhouse at
the gates of Florence and each participant will be able to taste the dishes prepared
during the classes.
Dante Alighieri
A cooking course offered by a language school. These group demonstration sessions can be taken for 3 evenings over 2 weeks or 6 evenings
over 4 weeks, from 18.15 until about 22.00. Under the expert guidance of their friendly chef,
students learn how to prepare traditional Italian dishes, which vary according to the
fresh ingredients available each season. At the end of each session all participants eat
what they have prepared together - food and wine are included in the price. This course is
designed for people who wish to learn the secrets of Italian gastronomy as a complement
to their Italian language studies.

Association of Culinary Professionals, a Certified Culinary Professional, and a student

Enoteca - Cooking Lessons
An introduction to preparing, and eating traditional dishes along with appropriate wines.
You prepare the dishes and enjoy the products of your work with the appropriate wines.
Classes may be scheduled for any dates with two day advance notice, and can be conducted
in Italian, English, German, Spanish, French, Portuguese, or Japanese. You may take one
lesson or combine them to fashion a program to your interests. The lessons begin at 16:00
daily.
Ecco la Cucina
Ecco La Cucina is a hands-on Italian cooking class offering an in-depth learning experience
about the foods and wines of Tuscany. The small, intimate classes, limited to six people,
are designed to maximize your exposure to Italian foods and cooking techniques, allowing
you to brush up on your skills or learn new ways of approaching food. Taught by
Italian-American chef, Gina Stipo, this fun and informative week-long immersion into
Italian cuisine will highlight regional dishes, locally produced cheeses, olive oils and
wines. Class also includes excursions to the surrounding area to enhance your learning
experience.
Giuliano Buglialli's Cooking in Florence
Giuliano Bugialli, popular Italian cooking teacher, and famed cookbook author hosts this culinary course in Tuscany.
. The combination of his deep knowledge, remarkable technique and theatrical charisma consistently attract
record-breaking audiences to his classes. In 1973, Giuliano founded Cooking in Florence,
the first cooking school in Italy taught in English. His aim was to provide a well-rounded
base for the study of Italian cuisine, by combining the finest cooking instruction with
a full immersion in the local culture. Cooking in Florence includes five full-participation
cooking classes followed by a complete meal with appropriate wines. Giuliano teaches
every class himself and each student learns to make pasta, focaccia, etc. under his
personal supervision. Classes are taught in the state-of-the-art kitchen in Giuliano�s
fifteenth-century farmhouse. Techniques are demonstrated; then students choose the
dishes they want to prepare from the day's roster of recipes. Each week features
about 35 recipes and dozens of wines.
Here In Italy
Cooking course held both in Tuscany, and on the Almafi coast. Both week long courses, as well as
weekend courses are offered. Cooking classes are held for four hours each day, after which
tours to local vineyards and local towns are arranged.
