Nonna Lina makes a tasty rabbit dish that is so easy to prepare anyone can do it. Rabbit is similar to chicken in taste,
although there is not a great deal of meat on the rabbit as a rule. Properly cooked however, it is delicious, and a special
treat for the family.
1 Rabbit, Cleaned And Dressed
1/4 Cup Olive Oil
Salt & Pepper
1 Cup White Wine
2 Cloves Garlic, Peeled And Sliced
1 Bay Leaf
1 Teaspoon Thyme
1 Teaspoon Rosemary
Wash and dry the rabbit, and cut into pieces. Preheat the oven to 350 degrees F. Place in a casserole dish without the oil,
and cook on top of the stove, until the rabbit releases it's juices. Add the olive oil, and brown on all sides.
Add the seasonings, wine, and 1 cup of water, and bake until tender, and until all the liquid has been absorbed, about 1 1/2 hours.
