This simple soup recipe is real Italian comfort food, and is often requested by Saverio, Nonna Lina's husband when he is
in the mood for something to eat, but wants something light and nourishing. This soup can be put together in minutes, and
requires only a few ingredients most people have on hand in their kitchens every day.
4 Tablespoons Romano Cheese
4 Cups Water
4 Eggs, Separated
1 Small Bunch Parsley, Finely Chopped
Salt & Pepper To Taste
4 Slices Thick, Day Old Italian Bread
2 Bay Leaves
2 Tablespoons Butter
Bring the water to a boil with the bay leaves and parsley. Lightly beat the eggs whites and stir them into the water.
Boil 2 minutes. Put the egg yolks on top of the bread slices in four individual bowls. Pour the hot egg white mixture, dividing
it evenly between the four bowls. Season with salt and pepper, and add 1 tablespoon of cheese, and a little butter to each bowl.
Serve!
