This is a hearty soup that Nonna makes when her family wants a complete meal in a bowl. You could serve
this soup on slices of grilled garlic bread for a pleasing presentation. A soup like this represents Italian country cooking
at it's best!
2 Pork Chops
8 Cups Water
5 Carrots, Chopped
4 Stalks Of Celery, Chopped
1 Onion, Chopped
2 Cloves Of Garlic, Minced
3 Whole Tomatoes, Cored, Seeded And Chopped
1 Green Pepper Chopped
1 Yellow Pepper, Chopped
4 Potatoes, Peeled And Cut Into 1 Inch Cubes
2 Cups Shredded Cabbage
1 Cup Green Beans, Chopped
1 Medium Zucchini, Chopped
Salt & Pepper
3 Tablespoons Chopped Fresh Basil
Pinch Of Anise Seeds
Boil the water, and add the pork chops. Skim the water and add the tomatoes, carrots, celery, onions,
peppers, and seasonings. Cook for 2 hours until tender on low heat. In a separate pot, cook the cabbage. zucchini, potatoes and
green beans until tender, about 30 minutes. Add these vegetable to the rest of the ingredients in the soup pot, and cook everything
together for another 20 minutes. Serve hot.
