This recipe is for a very basic, tasty chicken broth that can be used in many different ways.
Simmer it slowly to prevent cloudiness, and while it is cooking, gently skim off any foam from the top. Nonna Lina's grandchildren
all grew up with her Pastina in Brodo, or as they call it, "Ball Soup", and she always seems to have a jar of homemade
chicken broth in her refrigerator to prepare a quick, flavorful bowl of soup whenever it is needed. Nonna uses small ball shaped
pasta in her brodo, but any small pastina, or even tortellini could be used. Simply simmer the pasta in the broth until tender,
and serve with grated Parmesan cheese.
1 Small Stewing Chicken (Or Equivalent In Chicken Pieces, About 2 to 3 Pounds)
Salt & Pepper To Taste
2 Stalks Of Celery, Cut Into Pieces
1 Onion, Coarsely Chopped
1 Tomato, Coarsely Chopped
1 Bay Leaf
Combine all ingredients in a large stock pot, just cover with water and simmer on low for about 3 hours. Periodically, as the
soup simmers, skim off the foam with a ladle.
Drain the broth from the other ingredients, and strain the broth through cheesecloth. Taste, and season with more salt and
pepper as needed. Use as desired.
