This is an easy recipe for making apricot jam that Nonna makes each year from the fruit trees in her garden.
This jam is great on toast, as well as used as a filling in cookies and other baking.
4 Quarts Fresh, Ripe Apricots
Sugar
Wash the apricots, and place them in a large pot with a little water. Steam for 10 minutes. Strain the apricots, placing
the pulp into a measuring cup. For each cup of apricots, add 1 cup of sugar. Return the apricot puree and sugar to the pot,
and cook over low heat at a simmer for 1 hour. Place prepared jam into hot, sterilized jars, and store in a cool, dark place.
