This is an easy recipe for making a potato salad with oil and vinegar rather than mayonnaise. This salad is great
both warm, and at room temperature. Not only is this salad delicious with grilled meats, it is much safer to take along on picnics without mayonnaise!
4 Large Potatoes
1 Onion, Peeled And Sliced Thinly
1 Small Bunch Of Parsley, Chopped
1 Large Clove Of Garlic, Peeled, And Minced
6 Tablespoons Olive Oil
2 Tablespoons Red Wine Vinegar
Salt & Pepper
Quarter the potatoes, and then boil them until fork tender in salted water. Cool until you can comfortably handle
them, and then peel them and slice them thinly. Place all of the ingredients together in a serving dish, and mix carefully to
coat with the dressing. Let stand 1 hour at room temperature before using.
