Vedure Saltate
This is rustic, country cooking at it's best. This sauteed green's vegetable dish is great with almost any entree. Use any greens such as rappini, spinach, Swiss chard or broccoli rabe.

Carciofi Romani
This recipe is another family favorite of Nonna Lina's which is a traditional recipe from Rome. The completed dish creates artichokes with almost a creamy smooth texture. This is a great alongside any entree, or they can also be used on the antipasti table.

Pickled Eggplant
This is a great recipe to make at the end of summer when eggplants are flourishing in the garden. This tasty pickled eggplant relish makes a nice side dish relish, or a nice addition to an antipasti tray.

Pickled Green Tomato
These tasty tomatoes, pickled in vinegar, olive oil and spices are delicious and are a great way to use up green tomatoes at the end of the season. Nonna also makes a mix of eggplant, tomatoes and peppers that is just as tasty. At Nonna's house, there is always a bowl of preserved or pickled vegetables made from her vegetable garden each year on her table at mealtimes.

Italian Style Potato Salad
This is an easy recipe for making a potato salad with oil and vinegar rather than mayonnaise. This salad is great both warm, and at room temperature. Not only is this salad delicious with grilled meats, it is much safer to take along on picnics without mayonnaise!
